Anyone know what the plates are called on a 1998 31ft open that are bolted to the hull bottom that cover the prop shafts at the stuffing box, and what there use is? I have the starboard side is missing and want to order one. Any ideas on where to get them?

I have always called them shaft covers, but I'm not sure if they have an official name. It's purpose is to smooth the flow of water to keep turbulence out of the props. They are not 100% necessary, but I would bet they increase speed and efficiency.
This part is only manufactured by Tiara Yachts. They would be the only suppliers of new pieces. Finding pre-owned ones is going to be tough as there is no reason to remove them from an existing boat. You could have them custom made, but my guess is that would be cost prohibitive.
Contact Tiara Yachts Customer Service and see if they still offer them. If they do, post here to let us know what they cost and their availability.

Well I got a call back from Brian at Tiara they are call shaft log Tunnel covers the take three weeks to make and they cost $550.00 . There is a port and starboard side.

$550.00 is better than having them custom made, expensive yes, but not horrible. Good luck!

I realize this thread is probably dead, but.
Boat was hauled today and the hauler managed to bust off a piece of my port side shaft log tunnel cover. Has anyone repaired a missing chunk and any do's or don'ts?
