Look for a location behind your return air grill as that is the most likely place to find the evaporator. My salon unit is under an access panel under the sette cushion and the stateroom unit is located under the forward section of the bed. Both are accessible without pulling the grill (no screwdriver needed).
This is a 31` Open.
The return seems to be behind the steps entering the cabin.
There is no indication that anything here is easily removable or designed for access.
This area is the opposing side of the engine room bulkhead, so it doesn't seem a likely nor roomy enough place for the A/C unit to be mounted.
I'm thinking the unit is mounted somewhere else and ducted over to the bulkhead.
Maybe another 31 owner can help. Otherwise turn on the fan and see if the hum of the fan motor gives you any clues. If you can find and chase the water lines (self contained unit) or refrigerant lines (split gas unit) they will lead you to your destination as well.

As someone had earlier had expressed, it is under/aft of the steps entering the cabin.
Because of space I did't really think it would be there, however, yes, it fits and is there.
Removed 15 screws to get at the baby (two of which were damaged and difficult).
My goal was not only for learning purposes, but also to clean the filter.
No sign of a filter anywhere. Ultimately I decided the previous owner must have "cleaned" the filter by getting rid of it.
I installed a new filter in what seems to be the appropriate place, time will show proof.
When the filter does need to be cleaned I will likely remove the 8 screws it takes to get at it and replace them with thumb screws or hanger bolts and wing nuts.
