I have a chance to get a 2004 3100 open with twin cummins 6BTA 5.9-LITRE 330 hp each. what are the pros and cons? what could I expect for handling (i.e. enough power fuel consumption etc.) would it be a good fish / trolling boat? and any other input you can provide would be appreciated.

I have a 32 Open with Volvo 310 HP. Great boat. Not a speed demon but great on fuel. Trolling for walleye needs one engine in gear (2mph)with autopilot working to keep heading. I don't have trolling valves. But puts me at .25 gal/hr...nothing. Cruising is 11-13gal/hr per side @ 25-28 mph. Cummins should be very similar.

I have a 1999 3100 with the same engines. You won't be disappointed, that's for sure.
Pros
Burns about 18-20 GPH at a 25Kt cruise.
No shortage of power, nothing like it when the turbos spool.
Cons.
You won't be able to troll without trolling valves. (5KTS with the boat in gear)
A few things to be aware of..
Make sure the after coolers have been serviced frequently. They're the week link and the cores will freeze to the case.
Maker sure it will turn 2900+ fully loaded. If not it's over propped.

I purchased a 31 Open with the twin 330 Diesel's last November.
Really like the boat.
Feel so much more confident in it's reliability vs. the Mercruiser motors in my previous boat.
I consider the handling to be great at docking-menuvering speeds, etc. feeling no need for a bow thruster.
While running ; I run with the trim tabs down three notches which offers a smother and more controlled ride.
I do not fish.
Power: Out of the hole in 4 to 6 seconds, max speed 36 - 39 mph.
Fuel consumption; low speeds 3-4 gph, moving along 9 gph.
