Tiara Sovran Low coolant temp Volvo Penta 600

We have Volvo Penta (2009 ) IPS 600 engines and suddenly the temperatures are no longer even at 185°. On starboard side they’re 185 but the port is fluctuating between 165 and 175. I just find it odd as I know Volvo penta has them calibrated for 185 once they get to temperature . Has anyone else experienced this?  Perhaps a bad thermostat?  Sensor ?Thoughts?  FYI coolant level is normal and impellers are new, as well as nothing in the sea strainers.

Haven't had that issue on my inboards yet but my 200 Optimax outboard on my last boat couldn't quite get up to temp, there was a small stone stuck in it keeping it slightly open.
That's where I would start...

Oops, thermostat that is...
