Not sure I fully understand your needs... I have a 2003 38 Open and accidently triggered the Fireboy system on my boat several years ago…My system consists of the Fireboy fire extinguisher, a box that controls the system (shuts engines off should a fire be sensed), a dashboard switch w/indicator and switch to trigger system, and a manual cable pull used to manually trigger the system. In my case only had to change the Fireboy exctingusher itself. All else was good, The reason I couldn’t just recharge the bottle was driven by the chemical used in the original Fireboy extinguisher as its no longer legal/allowed.. M2C

Oh, my bad.. Thought you we're asking about the Fireboy fire extingusher system in the engine room... Assume your asking about the fresh water and holding tank system that used FIREBOY-XINTEX mfg components. I had a similar problem and found a bad ground on both sensors at the tanks,... Additionally, I pulled the tank sensors out and made sure they were clean..Not sure what it was but they both work now....
Fine to check for loose connections etc., but do what most of us have done and ditch the Xintex system and install the more standard KUS system. Fortunately, you can reuse the wiring, but you will have to buy new senders and a new gauge.

I can find the senders by KUS , but i don't see a single gauge that will operate both sending units
What is normally done is a single gauge with a switch that toggles between the senders. Usually an (ON)-OFF-(ON) switch. Press and hold in the up position to read one sender, press and hold in the down position to see the other sender.
