Do your valves run HOT ? Mine feel pretty hot and wondering if this is a normal condition ?

Realtime do your fuel shut off valves run hot ? Mine seem to get pretty hot and thinking fuel running thru hot valves isn't a good thing?

I was loosing RPMs on one motor coming in after a day of trolling heading in at 3200rpms and suddenly dropping to 2500 on 454 crusaders. Fuel smell would get very strong when this happened. I replaced many parts to try and determine cause but ultimately it was a bad coil that was the cause. Been running good for last year but now starboard motor has same issue. Ordered a new coil today.

2004 Tiara 3200 crusaders 8.1 mpi

While on my last cruise I was traveling at 3200 rpm and my port engine started to surge periodically.
Every so often it would surge to a few rpm more the go below and back to 3200.
Engine oil pressure and temps never faltered. Good the whole time.
At one point I increased throttle but the engine would not increase throttle.
Upon return to port I powered down to 1000 rpm for a few minutes.
Then brought her back up to 3800 to get on plane, and she responded normally.
Any thoughts on this?
Fuel filters were new this year and all routine maintenance has been done.

I have same eng issue but starboard eng. 8.1, 07 3000 open
Started end of last year
Changed all plugs, wires, and fuel filters, ran boat end of last year for over 2hrs + straight no issue eng. Computer monitor connected 
This year, our first big run, it's back
The issue does not start until after an 1hrs 40 mins running time
I don't feel an eng stutter like it's a miss fire, 

I had a dock mate say this to me,
Everything is broken, you just don't know it yet!
