As we speak, I'm in the middle of having the countertop on my 88' 3100 replaced. Decided to install a new sink and faucet with a new laminate counter; eliminating the stove altogether. This would allow more space for food prep, etc. Should I find myself needing a cooktop, there are single and double burner induction tops which can live in a drawer when not needed. 

Full disclosure---I may have gotten the portable induction cooktop idea from one of these forums. I can't recall where I read it---just that I liked it.

Originally, I wanted to use Corian with an undermount sink. The drawbacks were cost and losing the teak fiddles---which I'm partial to. With the Formica and the topmount sink, I can just put a cutting board over the sink and reinstall the fiddles.
