If they haven't done a potable tank this size, the surface prep could be where corners get cut. On the hatch, I'd want the yard to show a template and router cut on a scrap panel first so the seam matches the neighboring panels. Also worth asking whether the epoxy choice can handle the flexing in a boat hull over time, since a coating that cracks just moves the leak.
